For our “Grano Antico” line we use Senatore Cappelli durum wheat semolina which is organically grown and ground in Italy.
We purchase our semolina from mills with certified supply chains. This enables small-scale farmers to rise to the challenge of producing quality traditional wheat even if it is not economically convenient due to the competition of the major markets.The cost of the end product is the result of a company choice focused on the utmost quality and the promotion of farming projects of social and environmental value.
The forerunner to modern durum wheat, “Senatore Cappelli” is an autumnal cultivar that was created by agronomist Nazareno Strampelli in 1915 by crossing native Southern Italian durum wheat with other wheat from Mediterranean countries.
It was given this name in honour of Abruzzo marquis Raffaele Cappelli, who allowed Strampelli to carry out some seeding trials in the fields he owned. Cappelli wheat, particularly versatile and rustic and of the utmost quality, is still grown in Southern Italy.
Its fine semolina, suitable for making pasta, can be used to produce gourmet pasta with a traditional flavour.
•High-quality wheat created by crossing different varieties and not by induced genetic mutations which, widely practiced in agriculture, sacrifice flavour and nutritional properties for higher yields.
•It contains a good percentage of protein, fibres, amino acids, vitamins and minerals.
•Less refined compared with common durum wheat and more digestible thanks to the lower gluten content.
